If you have traveled to Japan it is likely that you have had the pleasure of tasting Matcha. While in Japan during the summer, one of my favorite desserts was Matcha ice cream. Oishii! Matcha is widely used in a variety of desserts such as mochi, candies, pancakes, shaved ice treats, roll cakes, cookies, lattes etc. Matcha is a key ingredient in high demand not only for its umami but, equally for its health benefits. According to NHK, the yearly production volume of tea leaves in Japan is 2,600 tons and it has increased three times in the last 30 years.
